Ele se compila uma s\u00e9rie de medidas&nbsp;que precisam ser aplicadas ao longo de todos os processo da fabrica\u00e7\u00e3o de alimentos. Desse modo, \u201c\u00e9 poss\u00edvel garantir melhores condi\u00e7\u00f5es de higiene, sele\u00e7\u00e3o de fornecedores, pr\u00e9-preparo, preparo, embalagem, armazenamento, transporte, distribui\u00e7\u00e3o e exposi\u00e7\u00e3o \u00e0 venda para o consumidor\u201d, de acordo com o blog&nbsp;<strong><a href=\"https:\/\/www.paripassu.com.br\/blog\/descomplicando-as-boas-praticas-de-fabricacao-bpf\/\" target=\"_blank\" rel=\"noreferrer noopener\">PariPassu<\/a><\/strong>.<\/p>\n\n\n\n<p>De acordo com Patricia Moyano em \u201c<a href=\"https:\/\/certificacaoiso.com.br\/boas-praticas-de-fabricacao-e-legislacao-brasileira\/\" target=\"_blank\" rel=\"noreferrer noopener\">Boas Pr\u00e1ticas de Fabrica\u00e7\u00e3o e a Legisla\u00e7\u00e3o Brasileira<\/a>\u201c, essas s\u00e3o as leis que regem a constru\u00e7\u00e3o de um Manual de Boas Pr\u00e1ticas de Fabrica\u00e7\u00e3o:<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-cf8a966d86f863a248ab9608ced64488\">Legisla\u00e7\u00e3o geral<\/h3>\n\n\n\n<p>Segundo a Anvisa (Ag\u00eancia Nacional de Vigil\u00e2ncia Sanit\u00e1ria), essas s\u00e3o as refer\u00eancias a serem seguidas de forma geral pelas ind\u00fastrias aliment\u00edcias.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-a2b75b697fa81c34f5e3dae17e356974\">RDC n\u00ba 275\/2002<\/h4>\n\n\n\n<p>Essa Resolu\u00e7\u00e3o foi desenvolvida com o prop\u00f3sito de atualizar a legisla\u00e7\u00e3o geral, introduzindo o controle cont\u00ednuo das BPF e os Procedimentos Operacionais Padronizados, al\u00e9m de promover a harmoniza\u00e7\u00e3o das a\u00e7\u00f5es de inspe\u00e7\u00e3o sanit\u00e1ria por meio de instrumento gen\u00e9rico de verifica\u00e7\u00e3o das BPF. Portanto, \u00e9 ato normativo complementar \u00e0&nbsp;Portaria SVS\/MS n\u00ba 326\/97.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-7e3103ce2ea654550972de736deac5f1\">Portaria SVS\/MS n\u00ba 326, de 30 de julho de 1997<\/h4>\n\n\n\n<p>Baseada no C\u00f3digo Internacional Recomendado de Pr\u00e1ticas: Princ\u00edpios Gerais de Higiene dos Alimentos CAC\/VOL. A, Ed. 2 (1985), do&nbsp;<em>Codex Alimentarius<\/em>, e harmonizada no Mercosul, essa Portaria estabelece os requisitos gerais sobre as condi\u00e7\u00f5es higi\u00eanico-sanit\u00e1rias e de Boas Pr\u00e1ticas de Fabrica\u00e7\u00e3o (BPF) para estabelecimentos produtores\/industrializadores de alimentos.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-877700998dadefc67bcf5eb64d732322\">Portaria MS n\u00ba 1.428, de 26 de novembro de 1993<\/h4>\n\n\n\n<p>Precursora na regulamenta\u00e7\u00e3o desse tema, essa Portaria disp\u00f5e, entre outras mat\u00e9rias, sobre as diretrizes para o estabelecimento de Boas Pr\u00e1ticas de Produ\u00e7\u00e3o e Presta\u00e7\u00e3o de Servi\u00e7os na \u00e1rea de alimentos.<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-c4c7bef96a7e4fad3cb36e69277ae92d\">Legisla\u00e7\u00e3o espec\u00edfica<\/h3>\n\n\n\n<p>Tamb\u00e9m segundo a Anvisa, s\u00e3o essas resolu\u00e7\u00f5es que devem ser seguidas para as empresas dedicadas a cada um destes produtos:<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-94d1fbfd3d8350920cdefba7223754ac\"><strong>\u00c1gua Mineral Natural e \u00c1gua Natural<\/strong><\/h4>\n\n\n\n<p class=\"has-ast-global-color-0-color has-text-color has-link-color wp-elements-b46bc992295f2ea70da5cfb4e6db85ad\"><strong>RDC n\u00ba 173\/2006<\/strong><\/p>\n\n\n\n<p>Disp\u00f5e sobre o Regulamento T\u00e9cnico de Boas Pr\u00e1ticas para Industrializa\u00e7\u00e3o e Comercializa\u00e7\u00e3o de \u00c1gua Mineral Natural e de \u00c1gua Natural e a Lista de Verifica\u00e7\u00e3o das Boas Pr\u00e1ticas para Industrializa\u00e7\u00e3o e Comercializa\u00e7\u00e3o de \u00c1gua Mineral Natural e de \u00c1gua Natural.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-3b88db5224b92c08e96e06b14e732c68\"><strong>Gelados Comest\u00edveis<\/strong><\/h4>\n\n\n\n<p class=\"has-ast-global-color-0-color has-text-color has-link-color wp-elements-389e99823b71a4c27d8bb2681e790f52\"><strong>RDC n\u00ba 267\/2003<\/strong><\/p>\n\n\n\n<p>Legisla\u00e7\u00e3o que estabelece os procedimentos de BPF para estabelecimentos industrializadores de gelados comest\u00edveis a fim de&nbsp;<strong>garantir as condi\u00e7\u00f5es higi\u00eanico-sanit\u00e1rias do produto final<\/strong>, incluindo requisitos para produ\u00e7\u00e3o, transporte e exposi\u00e7\u00e3o \u00e0 venda, dentre outros. Essa Resolu\u00e7\u00e3o institui, ainda, a obrigatoriedade da pasteuriza\u00e7\u00e3o das misturas \u00e0 base de leite, ovos e derivados para fabrica\u00e7\u00e3o de gelados comest\u00edveis. A exemplo do formato adotado para as legisla\u00e7\u00f5es espec\u00edficas, consta do Anexo um instrumento de avalia\u00e7\u00e3o das BPF aplic\u00e1vel a esse tipo de estabelecimento.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-303362dbedf69d9b125340388edc9e62\"><strong>Amendoins Processados e Derivados<\/strong><\/h4>\n\n\n\n<p class=\"has-ast-global-color-0-color has-text-color has-link-color wp-elements-a5668206c47b21b0560a2919cbb40bf7\"><strong>RDC n\u00ba 172\/2003<\/strong><\/p>\n\n\n\n<p>Regulamento que aprova as BPF e os requisitos sanit\u00e1rios espec\u00edficos para o processamento de amendoim, com \u00eanfase nas medidas de controle destinadas a prevenir ou reduzir o risco de contamina\u00e7\u00e3o por aflatoxinas. Essa resolu\u00e7\u00e3o institui o instrumento espec\u00edfico aplic\u00e1vel aos estabelecimentos industrializadores de amendoins processados e derivados.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-9c8747414f980fe5bc2460adb9cb493b\"><strong>Palmito em Conserva<\/strong><\/h4>\n\n\n\n<p class=\"has-ast-global-color-0-color has-text-color has-link-color wp-elements-6ab772324a25722c21035a6b668033e4\"><strong>RDC n\u00ba 81\/2003<\/strong><\/p>\n\n\n\n<p>Considerando as altera\u00e7\u00f5es promovidas pela Resolu\u00e7\u00e3o \u2013 RDC n\u00ba 275\/02, houve a necessidade de complementar a legisla\u00e7\u00e3o aplicada ao setor produtivo de palmito em conserva, especificando as etapas cr\u00edticas do processo que devem ser documentadas e submetidas a um controle sistem\u00e1tico. A altera\u00e7\u00e3o foi consubstanciada por meio da publica\u00e7\u00e3o dessa Resolu\u00e7\u00e3o, que determina a implementa\u00e7\u00e3o de Procedimentos Operacionais Padronizados nas etapas de acidifica\u00e7\u00e3o e do tratamento t\u00e9rmico.<\/p>\n\n\n\n<p class=\"has-ast-global-color-0-color has-text-color has-link-color wp-elements-4fb15891f85ee9778af1fae2f77085b1\"><strong>RDC n\u00ba 18\/1999<\/strong><\/p>\n\n\n\n<p>Legisla\u00e7\u00e3o inovadora na \u00e1rea de alimentos por apresentar em seu anexo um instrumento destinado \u00e0 avalia\u00e7\u00e3o dos estabelecimentos industrializadores de palmito em conserva, congregando crit\u00e9rios relativos \u00e0s BPF e requisitos sanit\u00e1rios espec\u00edficos para o controle do processamento desse alimento.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-23a1b9298ee88744de132f7823c7752b\"><strong>Frutas e ou Hortali\u00e7as em Conserva<\/strong><\/h4>\n\n\n\n<p class=\"has-ast-global-color-0-color has-text-color has-link-color wp-elements-0be5c5c3adffa329dc740db6e27a29d3\"><strong>RDC n\u00ba 352\/2002<\/strong><\/p>\n\n\n\n<p>Regulamento que complementa a legisla\u00e7\u00e3o geral incorporando as medidas espec\u00edficas que devem ser adotadas a fim de garantir a qualidade sanit\u00e1ria e a conformidade das frutas e hortali\u00e7as em conserva com os regulamentos t\u00e9cnicos espec\u00edficos. Essa Resolu\u00e7\u00e3o contempla ainda uma lista de verifica\u00e7\u00e3o das BPF para estabelecimentos produtores\/industrializadores dessa categoria de produtos.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-9714f087d3ab1252209bb1bffbf1f8d8\"><strong>Sal destinado ao Consumo Humano<\/strong><\/h4>\n\n\n\n<p class=\"has-ast-global-color-0-color has-text-color has-link-color wp-elements-9c7b333db8c3f9c5e925c09ae789a591\"><strong>RDC n\u00ba 28\/2000<\/strong><\/p>\n\n\n\n<p>Considerando a import\u00e2ncia do sal como alimento selecionado para suplementa\u00e7\u00e3o de Iodo na dieta da popula\u00e7\u00e3o brasileira, essa Resolu\u00e7\u00e3o congrega em um \u00fanico ato requisitos higi\u00eanico-sanit\u00e1rios gerais e espec\u00edficos a serem observados no beneficiamento desse alimento, incluindo o controle da etapa de ioda\u00e7\u00e3o.
